Paul Novak

Paul brings more than 35 years of culinary experience to the kitchen, with a career that has taken him from Santa Fe to San Francisco, Seattle, and Denver. His love for cooking spans cuisines and styles, driven by a genuine enthusiasm for creating food that connects people. “I like cooking almost everything,” he says, a sentiment that shows in his creativity and care with every dish.

Paul values the sense of camaraderie and respect that comes from working with a strong team. “My favorite thing about working at Jettie Rae’s is the team, front and back of the house. Just really good people.”

Originally drawn to Western North Carolina for family and the region’s lush, green landscapes, Paul and his family enjoy spending time outdoors hiking and exploring local rivers.

At Jettie Rae’s, Paul continues to share his passion for food and teamwork through every dish he helps create.
